Low FODMAP Vegan Coconut Lime Pies

If you love zesty flavours and mousse deserts, but have an intolerance to dairy, then this raw food coconut lime pie recipe is for you!

Its a vegan, wholesome, 'tummy friendly' blend of fresh lemon, lime and coconut flavours. The super smooth 'mousse' filling is made from a blend of avocado and green plantains. Tons of healthy vitamins and antioxidants here!

As well as being super tasty and healthy, this desert is a good choice for those of us with Celiac disease, IBS, a wheat allergy or gluten sensitivity.These pies can be stored in the freezer for up to a month.

Notes before we get cooking!

FODMAP red, amber green rating reflects the total amount of Fructose (FTS), Lactose (L), Mannitol (M), Sorbitol (S), Galactooligosaccharide (GOS) and Oligos Fructans (FTA) in the TOTAL volume/weight of the ingredients used in the recipe.

This recipe makes approximately 4 servings of pie. How many pieces of pie you eat is totally up to you!

I am a big fan of simple recipes that don't need fancy equipment. For this recipe it does help to have a good blender, and 4 ramekins (about 10cm diameter, 5cm deep).



Step 1.

Use a blender to mix together all ingredients for the base. The mixture should be quite fine, moist and sticking together when molded with the hands.

Step 2.

Press the mixture firmly into the base of your tin or ramekins.

Step 3.

Use a blender to mix together all of the ingredients for the filling. The mixture should be thick but very smooth.

Step 4.

Pour the mixture on top of your base(s).

Step 5.

Pop the pies in the freezer for a minimum of 3 hours.

Step 6.

Allow to soften for 15-20 minutes before serving
