Low FODMAP Rocket (Arugula), Samphire & Courgette (Zucchini) Flower Salad

If you like hot & spicy foods, then this no recipe, recipe may just be for you!


This salad packs a punch! It contains 'spicy' rocket leaves, salty samphire and slices of red chili pepper.


It's so simple to throw together and tastes great! It's full of micro-nutrients , low in calories, saturated fat and cholesterol.


I added gem lettuce & courgette flowers and topped this salad with star (borage) flowers....but you could add any type of greens or toppings that suit you!


Did you know that courgette (zucchini) is technically a fruit and begins life as a beautiful flower??! The only fruit in fact that begins with a letter Z!


There are male and female versions of courgette/zucchini flower- the female is pollinated with the help of bees and goes on to produce the zucchini. You can see a female in flower here;



Courgette flowers have a soft, mild taste that works well with citrus flavours like lemon and lime.


I drizzled this salad with a mix of grape seed oil, lemon and a touch of salt. You could use lime or any other dressing of your choosing. Balsamic vinegar would also work well, as would a touch of honey.


And that's it!! Salad in a flash x
