Low FODMAP Broccoflower and Pomegranate Salad

Updated: May 17

I love no recipe recipes! This salad is so simple to throw together and tastes great!

I pulsed some uncooked broccoflower that I had left over in a blender for literally less than 2-5 seconds to get this fine, rice like texture. Broccoflower is also called Romanesco. Taste-wise its somewhere between a broccoli and a cauliflower. For this salad, broccoli would also work well well.

I added some sorrel cress and pomegranate to give this salad a fresh taste. Citrus flavours also work nicely ......I drizzled this salad with a mix of grape seed oil, lime and a touch of salt. you could use lemon or any other citrus fruit of your choosing.

And that's it!! Salad in a flash x

Will you throw a salad together today?
