Low FODMAP Fiery Roast Potatoes

If you like Indian spices, you will love these grilled roast potatoes!


So simple to make, but so tasty! The potatoes are grilled in the oven, which gives them a buttery, caramel flavour. I make these potatoes in big batches as they freeze really well.


I used baby potatoes, but any potato will do. If you do use bigger potatoes, then try cubing them so they absorb the flavours from the spices.


When they are ready to serve, I sprinkle the potatoes with fresh coriander and green cilantro tops.

You could get creative with the spices. How will you flavour your fiery potatoes?

I'm a big fan of simple recipes that don't need fancy equipment. For this recipe it does help to have a pan for boiling and a baking tray for grilling the potatoes.

Method


Step 1.

Wash your chosen potatoes and cut into bite size chunks. Boil until tender.


Step 2.

Drain the potato and brush with coconut oil. Roast in the oven until crispy on all sides. Set aside.


Step 3.

Mix all of the dry spices together with the melted coconut oil (if solid at room temp melt first).


Step 4.

Add the potatoes to the spice oil mix, and stir until coated.


Step 5.

Garnish to taste with lime juice, coriander, scallion tops, chili and salt.


Step 6.

Serve and Enjoy!!
