Low FODMAP Rainbow Citrus Salad

There is something about eating a meal the colours of the rainbow, that sets me up in a good mood. Especially when that meal involves a no recipe, recipe! This salad is so simple to throw together and tastes great!

Citrus fruits all have their unique flavours that are even more interesting when put together. The trick is to ensure that the fruits you choose are well ripened...


I used pomelo, lemon, lime, pink grapefruit and orange.....I drizzled this salad with rice bran syrup. You could sprinkle it with a teaspoon of sugar or use maple syrup if you prefer. I included some zest as I actually like the strong, sour taste.


And that's it!! Rainbow citrus salad in a flash x
